Aunt Lou here.

Growing up, we were a meat and potatoes family. This recipe combines two of my favorites…scalloped potatoes and ham steak! Mom always made ham steak with fried potatoes (and it is so good!), and I love any kind of cheesy potatoes. So when I saw this, I knew that it would be a recipe we would love.

I was happily surprised with how easily this all came together. I sliced up the potatoes and onion right into the crock pot and it all came together in no time!

I also made an adjustment on the recipe. Since Ryder and I really love cheese, I added a little bit more to this recipe. And boy was it good!

Simple, easy weeknight dinner with a surprise (at least it was for me) – the ham comes out very tender. I like ham, it’s easy to cook and versatile, but let’s admit it – it can be very dry! Not with this recipe though. Any extra potatoes are good with breakfast the next day.

There are a few possibilities for why your ham and potatoes are watery: Small Pan: If you used a pan smaller than a 2-quart pan, it is likely that not as much water was evaporated when making the sauce. That would leave a thinner sauce. Be sure to boil the finished sauce for a minute, as directed in Step 2.

Potatoes or rice can remain rock-hard after prolonged cooking. Starch will not swell if it is acidic. If you have a lot of sour cream in your scalloped potatoes or add something acidic, your potatoes may not soften. You can cook the potatoes with heavy cream or milk and then, after they soften, stir in sour cream.

A must for your pantry; quick, easy and GOOD. Great product, considering they come out of the box looking like potato chips. I reverse the measurements of milk and water (increasing milk/decreasing water ratio) and add 2 tlbs butter. Makes it more creamy and moist.
