Tips for Making French Onion Soup:

I’ve tried a few French onion soup recipes over the years but they never quite turned out like I expected, so here are my best tips for making it delicious.

Don’t get in a hurry caramelizing the onions. Cook them low and slow and the flavors will really develop.

Use good beef broth, taste the beef broth before you start and make sure that it tastes good. If not, don’t use it to make this soup. It is the major flavor of French Onion Soup and will great effect the final taste of the soup. I don’t recommend starting with bullion for this soup.

We made our own beef broth but there are lots of store bought options that are delicious for making soup.

What about the wine? Honestly, I like this soup better without the wine. I’ve made it with different kinds of wine and I always feel that it is overpowering, so we skipped it in this version and we were very happy with the taste.

Use a really good melty cheese to top your bread. Swiss, Gruyere or Emmentaler are great options. Buy a wedge of cheese, don’t buy pre-shredded cheese. It has flour or other additives to keep it from clumping and will not melt or taste as well.

FAQs

What can I substitute for wine in French onion soup? ›

If you prefer not to use Wine, you can substitute 3 Tablespoons white wine vinegar + chicken or beef broth to make 3/4 cup.

How do you deepen the flavor of French onion soup? ›

A few sprigs of thyme and a bay leaf elevate the soup even more, but I take it a step further, adding a splash of fish sauce for complexity and depth—don't worry, it won't taste fishy—and a hit of cider vinegar to balance some of that oniony sweetness.

What is the difference between onion soup and French onion soup? ›

What is the Difference Between Onion Soup and French Onion Soup? French onion soup is always made with beef stock. Other onion soups can be made with chicken, vegetable, or beef stock. Additionally, French onion soup typically contains wine or sherry, which isn't typical or necessary in other onion soups.

What to add to bland French onion soup? ›

Traditional herbs like thyme and bay leaves work exceptionally well in French onion soup. Consider adding a pinch of dried thyme or a couple of bay leaves to the pot while simmering the soup. Experiment with additional seasonings like garlic powder, Worcestershire sauce, or a splash of red wine for added complexity.

Can I skip wine in a recipe? ›

Chicken or vegetable broth is a great white wine substitute, as it adds both liquid and flavor. If using a store-bought broth, opt for low-sodium or no sodium so that you don't throw off the salt content of the dish.

What is a good substitute for white wine in soup? ›

A good substitute for a cup of white wine is a cup of broth or vegetable stock, with a splash of vinegar or lemon juice for acidity. The general rule is to add one tablespoon of vinegar for every cup of broth used. For recipes requiring ¼ cup of white wine or less, it's generally safe to omit the wine altogether.

How to doctor up canned French onion soup? ›

Some fresh rosemary or thyme brings a woody, peppery taste to the soup, complementing the umami flavor of the beef stock. With a splash of balsamic vinegar and green onions or fresh basil as a garnish, the canned soup is transformed from a grocery store original into a gourmet dish.

Why do you put baking soda in French onion soup? ›

The caramelized onions for this soup cook more quickly due to a pinch of baking soda but still have that deep, slow-cooked flavor. Topping the soup with hot, cheesy toasts prepared while the soup simmers, eliminates the need to bake the soup in specialty French onion soup bowls.

Why does French onion soup taste so good? ›

French onion soup is the ultimate comfort food. Onions get slowly cooked until sweet and caramelized, then simmered in rich broth until they're practically falling apart. To finish it off, toasted bread is added to give it that lovable crisp-gone-soggy texture and a generous amount of Gruyère cheese is melted on top.

Why is French onion soup so expensive? ›

First, French onion soup calls for a ton of onions. While onions aren't expensive, there's a lot of labor involved in halving, peeling, and slicing 10, 12, 50, or one billion onions (I don't know how much soup you make).

Why is my French onion soup bitter? ›

The underlying flavor of this soup is the deep umami flavor of the caramelized onions. If you rush this process, the result will be a bitter charred flavor, and if you underestimate and skip this process the flavor will be nowhere near as deep or complex.

Should French onion soup be thick or thin? ›

Made slightly thicker than most watered down soups because every mouthful NEEDS a slightly thickened texture to compliment the caramelized onions.

Why does onion soup upset my stomach? ›

Onions are hard to digest largely because they contain fructans, which are not absorbed well in the small intestine. In fact, as fructans ferment, they can cause a great deal of digestive distress in the form of bloating, gas and diarrhea.

Is French onion soup for the poor? ›

The story behind this famous soup

In ancient times, Romans saw it as a dish for the poor. This is due to the fact that onion cultivation was accessible to all, especially to peasants.

How do I thicken French onion soup? ›

The easiest way to thicken your French onion soup is with flour. You can also use cornstarch if you don't have any flour. Remember to never add the flour or cornstarch directly to the soup – otherwise you run the risk of it clumping.

Can I use broth instead of wine? ›

Chicken or vegetable broth can be a flavorful replacement for white wine. You can even swap it in equal amounts (go for low-sodium broth so your dish doesn't end up too salty). Just keep in mind that broth won't add any acidity, so you might want to add a touch of white vinegar to achieve a similar tang.

Is there a substitute for wine in cooking? ›

White grape juice: Use white grape juice as a substitute when you want to add sweetness, or deglaze the pan. For a punchier substitute, try mixing a tablespoon of vinegar or lemon juice per cup of grape juice. Chicken or vegetable stock: Substitute stock for white wine when you want to add depth of flavor to a dish.

Why is there wine in French onion soup? ›

A traditional French onion soup recipe is commonly flavored with wine, and sometimes cognac or brandy. Alcohol adds complexity to the flavor of the soup, but it is not required.

What is a substitute for dry wine in a recipe? ›

One easy substitution for dry white wine is white wine vinegar. Made from dry white wines, this type of vinegar has many of the same flavor characteristics as white wine — sans the alcohol. You can also use other light-colored vinegar such as white vinegar, rice vinegar or apple cider vinegar.
