Excellent cornbread !!!!I am 72 years old and cook all our meals. I've tried dozens of cornbread recipes and this one is the best. It's texture is perfect . It doesn't fall apart nothing not to like about it. Its soft but still has sturdy texture. Can't wait to make cornbread dressing out of it.

I used the skillet method got the pan hot added butter to the bottom and cooked it . It makes a great brown bottom crust that way

Thanks so much the ingredients make a perfect pan of cornbread!

Hi Diane, I think that would work! I'm not 100% sure what the bake time would be. If you try it let us know how it works out. I'm sure our readers would love to have an alternative cook method 🙂

The extra egg which is increased protein and binder makes the cornbread denser and heavier in texture.

As for the best cornmeal for cornbread, either fine- or medium-grind cornmeal is a great choice. Medium-grind cornmeal will bring slightly more texture and grittiness to the batter, which you may or may not want (it's up to you!). You can use fine or medium cornmeal in these extra corny muffins.

I also prefer to add in a teaspoon of baking powder for extra 'lift'. It doesn't come out cake-y, just slightly more fluffier than regular cornbread. Cornbread can be on the crumbly side… this one isn't like that at all. However, for a denser cornbread, leave out the baking powder.

What's the difference between southern cornbread and regular cornbread? ›

Northern cornbreads tend to be more cake-like, on the sweet side, with a finer crumb due to more flour in the mixture. Southern cornbread is flavored with bacon grease, and cooked in a cast iron skillet, a perfect side for barbecues, or chili. It also tends to be rather crumbly.

What is the difference between New York cornbread and southern cornbread? ›

While both styles generally use the same ingredients -- cornmeal, flour, eggs, and baking powder -- the variance lies in the flavor and texture. Northern-style cornbread tends to be sweeter, moister, and cake-like compared to its Southern counterpart.

Can I use sour cream in place of milk for cornbread? ›

Sour Cream can be substituted for milk in cornbread but will need to be thinned. I recommend using 75% sour cream and 25% water. Sour Cream will also change the taste of the cornbread and will add a slight tangy flavor which can be counteracted by using a small amount of vanilla extract.

What do they call cornbread in the south? ›

It can be made in a variety of ways, including as a savory bread to be served with a meal or as a sweeter bread to be eaten as a snack. Some people in the South also refer to cornbread as "corn pone" or "hoecake."

Can I use half-and-half in cornbread mix? ›

Combine the half-and-half, eggs, butter (or shortening), and sugar (if using). Add half-and-half mixture to the flour mixture and combine just until the flour is moistened, no more than 10 to 15 seconds. Then fold in the corn, but don't overmix the batter or your cornbread will be too tough.

Should cornbread batter sit before baking? ›

In a medium bowl, using a wooden spoon, stir the corn flour and cornmeal with the buttermilk until there are no dry pockets remaining. Cover and refrigerate overnight (or for as little as 1 hour if you want to make the cornbread right now). Preheat the oven to 375°F.

What happens if you use baking soda instead of baking powder in cornbread? ›

However, if you're in a pinch, the substitution is one teaspoon baking soda equals three teaspoons baking powder. Baking soda is also much stronger than baking powder and, by trying to provide enough leavening, you may wind up with an unpleasant metallic, salty taste in the final baked product.

Can I skip baking soda in cornbread? ›

Gan — who notes that any substitutions may change the texture and flavor of the final dish — recommended using three times the amount of baking powder in lieu of baking soda. So, if a recipe calls for one teaspoon of baking soda, use three teaspoons (or one tablespoon) of baking powder.

How does an extra egg affect baking? ›

Too much yolk can overwhelm a dish with "eggy" flavor, and their tenderizing function weakens a cake's structure. Too much white, on the other hand, will create an awkward batter and a dry cake. Using the whole egg gives you the best of both worlds.

What does adding an extra egg do? ›

The more eggs that are added, the stronger the physical protein bonds will be. While the yolk also contains some protein, it's more famous for its fattiness. Egg yolks give a smooth, velvety texture to whatever they're added to, whether it's a cake batter or my favorite luscious lemon curd from Bakes by Brown Sugar.

What makes cornbread rise more? ›

The air spaces are created by bubbles of gas (mostly carbon dioxide) produced within the batter during the baking process. Ingredients that produce these bubbles are called leavening agents. In "quick breads," which have no yeast (and don't require hours for dough to rise), the leavening agent is usually baking powder.

What makes cornbread stick together better? ›

Add shredded cheese.

Melty, gooey cheese will hold your cornbread together and give it a fantastic flavor. Shredded cheddar cheese is best for most cornbread recipes, but you can try experimenting with another variety.
